It is a great side dish that comes together quickly and easily.

That is all you need to take a bland, “boring” vegetable to an elevated height that everyone will enjoy. The perfect side dish for a weeknight dinner, a pot luck party or a special holiday occasion. What’s better than that?
I always love surprising people with vegetables they “don’t like” and converting them in to fans.

I have made these for many different get togethers and everyone raves about them. The earthiness from the sweet maple syrup, the flaky sea salt, the little bit of bite from peppered bacon is the perfect mixture to toss these Brussels Sprouts with. The flavors compliment each other and the dish comes together quickly.

Ingredients for Maple Roasted Brussels Sprouts with Bacon
When I tell you this recipe is incredibly easy? I mean it is really, really easy.
And it is so delicious that it feels like it should take much longer.
This recipes comes together quickly and in no time you have a delicious, decadent side dish. I have been known to eat a bowl of these for breakfast. These mapley, bacon little bundles of roasted goodness are some of my absolute favorites.
So, all you need is….
Brussels Sprouts – I think these are such an underrated vegetable that has unfortunately gotten a bad rap. They are delicious. Trim the ends and take off the small outer leaves and halve them.
Bacon – Pick your favorite. Hickory smoked, Applewood, or our favorite… Peppered bacon. I prefer a thick cut bacon in any recipe, just so it has a bit more body to stand up to other ingredients, but your preference will be perfect.
PURE Maple Syrup – Please don’t confuse table syrup with the golden goodness that is pure maple syrup. It isn’t your fault if you do, but once you try the real stuff, you’ll never go back. I promise it is worth the price.
Kosher Salt – You could use sea salt, but Kosher is my go to and seems a bit more forgiving.

I told you this was simple.
I think too often people equate simple with boring.
That’s just not the case here.
This recipe does not lack in the flavor department and is certainly not boring.
I would wager that this is the recipe that truly can convert non-believers to Brussels Sprouts lovers.


How to Make Maple Roasted Brussels Sprouts
As easy as the ingredients list is…
…The instructions for maple roasted Brussels sprouts with bacon are just are simple.
Preheat Your Oven to 450 degrees.
Cut Bacon In To Bite Size Pieces and scatter evenly across a rimmed baking sheet.
Once the oven is preheated, place your bacon / baking sheet in the oven to roast for 10 minutes. Stir the bacon two or three times. Allow the bacon to become crispy and the fat to be rendered.
Remove Bacon Pieces to a Plate Lined With Paper Towels.
Toss Brussels Sprouts with Rendered Bacon Fat and Maple Syrup. Make sure the sprouts are completely coated in both bacon fat and syrup.

Sprinkle with Kosher Salt.
Place Brussels Sprouts in the Oven and roast for 20 minutes, stirring twice.
Remove from the oven and sprinkle the bacon pieces over the Brussels Sprouts. Stir to combine and return to the oven.
Continue to roast for another 5 minutes or so. The Brussels Sprouts will be ready when golden, crispy and fork tender.

How To Serve Maple Roasted Brussels Sprouts
Maple roasted Brussels sprouts with bacon are a wonderful side dish for a Christmas dinner, New Year’s Eve celebration, Easter lunch or summer picnic. They are also quick enough for a weeknight meal or meal prep.
They can be served straight out of the oven, at room temperature or kept in an airtight container in the refrigerator for up to 4 days.
But trust me- you’re going to love these so much, they won’t have a chance at sticking around for 4 days.

Maple Roasted Brussels Sprouts with Bacon
Ingredients
- 6 Slices Peppered Bacon cut in to bite size pieces
- 2.5-3 lbs Brussels Sprouts trimmed and halved lengthwise
- 1/4 C Pure Maple Syrup
- 1 tsp Kosher Salt
Instructions
- Preheat oven to 450 degrees
- Cut bacon in to bite size pieces and spread evenly on a rimmed baking sheet. Roast for 10 minutes, stirring once or twice, until bacon is crispy and the fat is rendered.
- Remove bacon pieces to a paper towel covered plate to drain
- Toss halved Brussels sprouts with rendered bacon fat and maple syrup. Stir to thoroughly combine and coat everything with both fat and syrup. Sprinkle with salt.
- Roast Brussels sprouts for 20 minutes, stirring a couple times.
- Add the bacon pieces back to the baking sheet and toss to combine with the Brussels sprouts. Return to the oven. Roast for another 3-5 minutes until the Brussels sprouts are fork tender and golden.
